Pemaquid Oyster Company

Pemaquid Oyster Company was established in 1986. They buy 2mm seed oysters from two Maine shellfish hatcheries in early June and grow them in upweller systems until they’re large enough to deploy in floating nursery bags. When the seed reaches 50 mm, the oysters are bottom-planted on their 18 acre, high-current, hard-bottom leases. They’re harvested 1-2 years later with a chain-sweep drag aboard the 32’ F/V OYSTER GIRL II. The oysters are wet-stored in purging rafts at Clark’s Cove in South Bristol, 8 miles downriver where the colder, saltier, deeper water gives Pemaquid Oysters their clean, sweet brine flavor. The slower-growing bottom-planted oysters have a deep cupped hard shell, easy to open. Pemaquid markets the oysters as cocktail, select and jumbo grades.
